This gluten free waffle recipe makes waffles that are so delicious that people will ask for them even if they aren’t on a gluten-free diet!
Classic gluten free waffle recipe
1 cup Bob’s Red Mill 1 to 1 Baking Flour
1 teaspoon baking powder
Pinch of salt
1 packet or 1 teaspoon sugar and 1 teaspoon vanilla extract
1 cup milk or coconut milk
1 large egg
2 tablespoons butter, melted, or oil of your choice
Fruit, cut in 1/2″ pieces, of your choice
Bacon, ham or sausage, cooked, of your choice
Preheat your waffle iron. If you wish to hold the waffles until serving time, preheat your oven or toaster oven to 200 degrees or to the warm setting.
In a large mixing bowl, combine the flour, baking powder, salt and sugar. In another bowl, whisk the milk and egg. Pour the liquid ingredients over the dry ingredients and stir until just combined. If the batter seems dry or too thick, add water one teaspoon at a time. Stir in the 2 tablespoons of butter.
Lightly butter or spray the waffle iron’s grid if necessary (we like to use some melted butter to coat the grill since it helps to make the waffles crispier)
Using a gravy ladle or measuring cup, spoon out about 1/2 cup of batter onto the hot iron and spread with a silicone spatula or wooden spoon. Close the lid and set to your liking. Serve with fruit and sides of your choice. We used a mixture of blueberries, strawberries and apples.
TIP: Make your own gluten free waffle mix by pre-measuring the dry ingredients and storing them in individual containers for handy use in the morning.
