Kids in the Kitchen: Salsa and Chips

Imagine your child craving a snack or meal and actually walking to the store with the recipe in hand to purchase all the ingredients and make it.   WHAT? Impossible… well that is exactly what THIS kid did one afternoon.

This very nutritious and delicious salsa with pita chips didn’t take too long, but afterward he even tweaked it to make it taste better…what a kid!   Now if he could only clean his room.?

Take a break and let your kids make this tasty salsa

SALSA

3 roma tomatoes
1/4 jalapeno 
1/2 cup cilantro
1/2 small onion
2 cloves garlic 
Juice of 1/2 lemon 

Cut the Roma tomatoes into quarters and remove seeds.  Do the same with the jalapeño (be careful – you may want to wear gloves and/or wash your hands thoroughly since the jalapeño seeds and oils may irritate your skin and/or eyes).  Chop the onion and garlic.  Place the tomatoes, jalepeno, cilantro, onion, garlic and lemon juice into a food processor and blend to desired salsa consistency.  Add salt and pepper to taste.

PITA CHIPS

Store bought Whole Wheat tortillas
Himilayan Salt
Pepper
Garlic Powder
Chili Powder

Pre-heat oven to 375F.

Cut Whole Wheat tortillas into eighths.  Line a baking pan with parchment paper or use a stone pan and then lay the cut tortillas flat on the pan. Evenly sprinkle the Himalayan Salt, Pepper, Garlic Powder and Chilli Powder to taste. Bake in oven for approximately 20 minutes or until lightly browned.
